When he took over CLOS MIRAGES in 2020—a vineyard in the Gulf of Saint-Tropez that had fallen into disuse—the owner, who is also an architect, faced several aesthetic and technical choices for each of the estate’s buildings that he built or rebuilt.
For those with a historical legacy, Hervé PAILLARD opted for a style that respects Provençal and Mediterranean traditions in the broadest sense.
For the construction of the bioclimatic wine cellar, he reinterpreted traditional building principles, adapting them to a contemporary structure.
